Food Microbiology covers basic and applied aspects of microorganisms of importance to food safety and food spoilage. Our work is characterized by physiological and molecular characterization of food borne bacteria that cause disease in humans and we address central questions such as how the bacteria survive in various environments, what allow them to be transferred from one environment to the other and how dangerous (virulent) they are to humans.
In our research we prioritize to combine both molecular and genetic characterizations with studies of diversity and behavior in food-like systems as exemplified in our master and bachelor projects.
